Microwave Caramel Corn

I like to keep a paper grocery bag on hand to make this recipe. You also need a fair-sized microwave to fit it in! Warning: once you start eating this it's hard to stop! It's a great snack for wintertime game playing.

Microwave Caramel Corn

4-5 quarts of popped popcorn

1 stick butter or margarine
1 cup of brown sugar, light or dark
½ teaspoon of salt
¼ cup of corn syrup

½ teaspoon soda

Put popped corn into a heavy paper bag.

Put butter, brown sugar, salt & corn syrup in a 2 ½ quart casserole. Cook on high until mixture boils and cook for 2 minutes.

Add soda and stir well (mixture will foam and swell a little bit). Pour over popcorn. Stir popcorn, then fold the top of the bag down and shake. Microwave 90 seconds. Stir and shake. Cook 90 more seconds, stir and shake.

My recipe says to cook it a third 90 seconds, but I usually don’t because some of the popcorn starts to burn if I do. Much depends on the wattage of your microwave and your personal preference.

Dump caramel corn into a shallow pan. Cool and break apart.

Note: Caramel corn tends to get sticky in hot, humid weather. In the winter time, it is just fine in our dry houses, but taking it to a picnic in the summer is not always successful!
